Very easy but it takes some time. Start off with cutting off the skin of over a pound of fresh ginger. Best to buy in Spring before the ginger gets stringy.
Once the skin is removed, cut the ginger in thin slices. Then cook the ginger in a stainless steel pan. Bring to a boil and then on simmer for ten minutes. Drain the water and put fresh water and cover the ginger and cook it again (same way)...
Add 4 cups of sugar (that's right, that is not a typo,) to the pan with the cooked ginger slices, add the candy thermometer, boil until it reads 225F. Let it sit for an hour and place into a glass jar with lid. It will last a year in your refrigerator.
